Manitou Springs CO. It's scary that a few folks in the area are starting to recognize me now. 😁

I wanted to move to this general area in the mid 1980s, and I've spent the last nearly 40 years regretting not doing it.
It's a shame I never went there while I lived in CO

It's touristy to a point, as both the Pike's Peak Cog Railway and now the Manitou Incline are major draws for the town. But it still has a little of the Bohemian/artist vibe to it, and I won't deny that I've spent more than a few quarters on the arcade games there with family.
It also amazes me due to the CO Springs area and how they can have such beautiful and useful city-operated parks such as Garden of the Gods and the Helen Hunt Falls/Gold Camp Rd. area, where all we have in my city are dumpy parks along the Great Lakes system that are so bogged down in algae muck and zebra mussels that they have made the waterfront largely unusable (and we have to pay for a permit to access them). Plus, the recreational opportunities (even for something as simple as exercise) are in abundance compared to here, where I have to drive 40+ minutes to get to a bike trail where I don't have to worry about getting killed by either the beer-swilling, gun-toting urban rednecks in their pickup trucks or distracted ditzy women punching away on their smartphones rather than watching the roads. Or have to stumble along cracked suburban sidewalks as opposed to a nice trail out in nature somewhere.

My big regret about not moving there 30-40 years ago has to do with the housing prices out there now. Back then, they were within my budget. But, life happened and I got stuck here. We're still looking, though, and seeing what we can make work. I don't want to retire or die in this horrible state, that's for sure.

My gift for taking the (unpaved) road less travelled. But I'm sure I blew most of it off by the time I hit I-76 on the way back home.

And I'm not supposed to get sleepyzzz...thanks to Iowa DOT.

Iowa has interesting rest areas. This one had the educational theme.

Didn't see a food-related thread, so I'll just leave this gluten-free pizza right here...

I've had great luck with the King Arthur "00" gluten-free pizza flour. Very easy to prepare and my better half can have pizza again. (We've tried a few local pizza places but she's gotten sick on them...not so much from the gluten but from whatever else in those pizzas has irritated her stomach.)

Not-quite-so-gluten-free for mine. We only use turkey bacon as pepperoni, ham, etc. irritates both of our digestive tracks. (Yeah, getting old sux!)

A rare evening, once a month, we'll both have carbs like this. This was our November allotment. 😁 Now I need to eat salads and veggies for a few days to detox! We make a low carb version of crust from Fathead dough. It is similar to

We make a low carb pizza crust out of Fathead dough. It is a version of this, but my wife puts her own spin on everything she makes. The only issue with it is that the crust has to be baked prior to toppings being put on.

We have are having a foggy Christmas this year. That red-nosed fella earned his oats and hay last night.
It was murky over here also, a bit heavier by the lake but still dense in a few pockets when I had to head west yesterday. Over here, visibility was less than a quarter mile.

That's what this one calls for. The dough is more like a batter before it rises, yet once it comes together, it gets that "stringy" look of dough with a higher gluten content. Once it's done rising, it has to be patted out to form the pie. I think I bake it about a third of the time (6-ish minutes) before putting the toppings on. But even after all the fuss, I was surprised at how good the crust came out--it wasn't exactly like traditional dough but was close enough that I'd eat it without reservation. (I only make it for her since the dough isn't inexpensive.)

I tried a pizza the other day with the King Arthur "00" pizza flour and while it didn't rise much (I made a "quick" recipe as I couldn't wait 24 hours to have dinner 😁), it did come out thin and crispy which is what I like, and had more of a typical pizza crust texture than pies I've made with all-purpose flour and wheat gluten (which is added 2 tsp per cup, which essentially gives me "bread flour").

Spent the night in Canmore and got up a little early to experience the place in the morning (and not so much as a tourist passing-through).

This is a small town surrounded by mountains and you can sure see why it's so popular - just beautiful as the sun rose and lit-up the peaks.

I was just in time to catch an eastbound CPR freight blasting through town after navigating the Rockies, surprised how fast in went past.

This is actually the local pool and fitness center, which surprised me in how it seemed so impressive and over the top for its purpose (tax dollars at work?). A local who saw me taking it in said to me “we find it quite ostentatious really”.

Some of the local wildlife and multi-million dollar townhouses. Used to think I’d like to retire here someday, but it's now the most expensive place to live in AB, so best to consider other options.

But then being surrounded by raw beauty like this…maybe a really small place with no garage? :)
